Final Evaporation Day

It was so nice over the weekend that I went to school to collect more sap. With the sap that my crew collected last Friday and Monday, we had a grand total of 75+ gallons! So we decided to spend yesterday evaporating one final time. We boiled it down to about four gallones, which we will finish on the stove since we can regulate the heat better during that touchy final stage.
