Maple sugar was first used by northern Native Americans as a sweetener and soon moved to Europe (but changed to a syrup probably no one really knows if they made it a syrup or just a sugar) where people started to use it instead of cane sugar which had to brought from The East Indies. During the American Civil War abolitionists promoted it instead of canes sugar. Maple syrup has a very specific taste which baffles scientists. The things that might be causing this include volatile compounds such as vanillin (C8H8O3), acetoin(C4H8O2),and Propionaldehyde (CH3CH2CHO) some acids such as amino acids and sugars. The trees mostly used for maple syrup are: the sugar maple, red maple, and black maple. It is not known when it was first consumed just that the Native Americans were the first. It is usually eaten with pancakes, French toast, and waffles. It is only made in North America due to Europe not having the proper weather conditions. In Quebec people call imitation syrup sirop de poteau literally pole syrup a joke meaning that it was gotten from telephone poles.
